COOKING TIPS: Preserving the natural colors in cooking

1. To preserve the natural green color of leafy vegetable, that are a rich source of iron and other micro nutrients, add a pinch of baking soda to the boiling water!
At the same time, keep ice cold water ready. The moment the spinach is boiled, add ice cold water and the green color will remain! When adding cold water, keep stirring.
Adding a few drops of oil while making the purée of spinach helps to preserve the green color!
Also, while cooking in gravy, etc., add a pinch of turmeric and a few drops of lime juice.
2. When boiling red vegetable like beet root, add a dash of vinegar to the boiling water! The red color of the beet root will remain bubbling!
