Ingredients:

  • Thick Poha, 1 cup
  • Diced vegetables of your choice, 1 cup (we used carrots, beans, bell peppers, green peas)
  • Lightly roasted peanuts, 1 TBS
  • Mustard seeds, 1/2 tsp
  • 1 whole red chilli - Salt to taste
  • Coconut oil, 1 TBS
  • Cilantro for garnishing
  • Few drops of lemon or lime juice to drizzle over before serving
