Ingredients:
- Thick Poha, 1 cup
- Diced vegetables of your choice, 1 cup (we used carrots, beans, bell peppers, green peas)
- Lightly roasted peanuts, 1 TBS
- Mustard seeds, 1/2 tsp
- 1 whole red chilli - Salt to taste
- Coconut oil, 1 TBS
- Cilantro for garnishing
- Few drops of lemon or lime juice to drizzle over before serving
