Many decades ago, when I came to Trinidad, East Indian Cuisines were not available. There was no restaurant serving such cuisine. You go any country in any of the continent in the world, you will find east Indian Restaurant. Strangely enough, when I came to Trinidad, there was not a single East Indian Restaurant. The country has its own brand of cuisine inspired by East Indian Cuisine that they called Indian Cuisine. However, taste, flavors, presentation was nowhere close to East Indian taste, although cuisine in Indian has a very wide range through out the length and breath of the country.
It was a real challenge to create East Indian taste with locally available ingredients and spice blends. Many substitutes and alternatives were used to create flavors and taste. This gave me the opportunity for innovation and fusion to create the taste I was looking for.
With the passage of time I made the resolution to make various ingredients including, spice blends, different types of flours, whole wheat, multigrain, gluten free flours, super food flours. This was the first requirement. Then, how to use these various ingredients and necessary cooking techniques.
At Khushoo our constant effort is to provide more and more new ingredients, introduce new and innovative cooking techniques, encourage and help those who are really interested.
