RECIPES - Jowar, Sorghum Dosa

Ingredients:
  • Jowar flour - 1 cup
  • Green chilli - 1 tbsp
  • Onion - 1/4 cup
  • Coriander leaves - 3 tbsp
  • Ginger - 1 tbsp
  • Chilli flakes -1 tbsp (optional)
  • Salt to Taste
  • Cooking oil
Red chutney:
  • Onion - 1
  • Tomato - 1
  • Garlic cloves - 4
  • Dry red chilli - 4
  • Tamarind juice - 2 tbs
  • Salt to taste
  • Sugar - 1/2 tbs
  • Urad dal - 1 tbs
  • Chana dal - 1 tbs
  • Cooking oil - 1 tbs
  • Mustard seeds - 1/2 tbs
  • Curry leaves
Methodology:
Chutney:
1. Heat 1 tbsp coconut oil.
2. Add 1 tbsp Chana Dal and 1 Tbs Washed Urad Dal.
3. Fry until light golden. Add 2-3 cloves garlic and 2-3 dry red chili cook a few mins.
4. Add one large onion coarsely sliced when slightly cooked.
5. Add one medium tomato chopped and cook until tender.
6. Add 1 tbs diluted tamarind. Juice, Pink salt to taste and a pinch of sugar
7. Cook until tender.
8. Remove from flame and cool before grinding too a smooth paste.
9. Heat oil for tempering. Add Tsp mustard seed, asafetida, abd curry leaves. When crackle pour the temper over the chutney and mix.
Dosa:
Take 1 cup sorghum flour in a mixing bowl. To this add 1 chopped chili, ginger, onion. Mix well. You can add chili flakes.
Add 1 cup water first and mix using a wire whisk. Mix well and allow to rest covered for ten minutes.
Mix back again. For one cup of sorghum flour you need 3 cups of water. But add water half cup each time until you have added 3 cups of water.
Heat non stick griddle to medium heat. Drizzle some water and wipe with napkin.
Drizzle a few drops of oil and wipe spreading all over with a napkin.
Pour the mixture from outer edge to inside. It will form holes. Cover the holes with mixture. Drizzle a few drops pf oil and cook on medium heat until crisp. Serve why chutney.
Because of onion, etc., the dosa will form holes. If you do not add onion, then the dosa will turn out smooth.
