RECIPES - Kaju Laddu

This is an exotic Diwali and all occasion recipe.

Ingredients:
  • Cashew nut broken or whole, 2 cups
  • Sugar brown or coconut, 2 cups
  • Full cream milk powder, 1 cup
  • Cardamom powder, 2 tbs
  • Saffron strands, 1 tbs

Methodology:
  1. Freeze cashew nut for a few hours so that while grinding the oil does not surface
  2. Grind to fine powder using the pulse mode
  3. Sift and grind again until all powder is fine
  4. On low to medium flame in a deep wok like kadhai heat water! Add sugar and allow to boil! Make a one thread sugar syrup! You can check by dipping a spoon in the syrup and touch the spoon so that finger has a trace of syrup! Now check between index finger and thumb if there is one thread!
  5. To this add all cashew nut powder, milk and cardamom powder! Add 1 TBS ghee mix well into a smooth dough!
  6. As cooling, add saffron strands to give a look
  7. Now shape into  round ball of table tennis ball size
  8. While still cold, stick half cashew nut!
Serve for any occasion!
