RECIPES - Rice Flour Crepes (Maharashtrian Ghavan Recipe)

Ghavan is a traditional breakfast recipe from the Konkan region of Maharashtra which is similar to neer dosa. Serve it along with a tomato garlic chutney and a mixed vegetable korma for a delicious breakfast. This is gluten free crepes.
Traditionally, these are made out of brown rice flour, a pinch of salt, jeera, and water to form this batter, and immediately these are cooked out like dosas. However, you can make it with regular rice flour instead of brown rice flour.
Ghavan is similar to neer dosa recipe from Mangalore, the only difference is the variety of rice used. Ghavan is often served during festivals and is filled with coconut and jaggery to make a sweet recipe.
This recipe is good for breakfast and snack and is a quick dish to make.
Serve Maharashtrian Ghavan Recipe - Rice Flour Crepes with tomato garlic chutney or bell pepper chutney or any other chutney of your choice along with a cup of Masala Chai.

Ingredients:
  • 1 cup Rice , soaked for 4 to 5 hours. You can use rice flour instead of rice as well.
  • Coconut Oil , for drizzling, as required
  • Pink Salt , to taste
Methodology:
  • Soak the rice in water overnight or 5 to 6 hours. Once soaked well, grind into a smooth thick batter adding little water at a time.
  • Transfer the ground Ghavan batter into a bowl and add the salt and some more water to adjust the consistency of the Ghavan to ensure it is not very thick nor very thin.
  • Cover the batter and keep it aside for 10 to 15 minutes.
  • Heat a non-stick tawa and spread a little oil on it. Stir the batter and pour the batter from the edge of the pan moving towards the center. Spread evenly. Reduce the heat.
  • Drizzle a little oil all around and cook it until light brown. Now flip it and cook it on other side too. Transfer Ghavan on a serving plate and serve immediately.

You can use rice flour instead rice and then soak! When using rice flour, follow the same method!
